Avocado and Egg Breakfast Tacos. So yum.

I made these randomly one morning. And they were a huge hit!image directions:
Warm tortillas
Smash avocado on the tortilla & salt lightly
Sprinkle parmesan cheese over the avocado
Scramble eggs (I usually do 1-1.5 eggs per taco, depending on how hungry we are)

BOOM. DONE.

Top with Sriracha & scarf.

I usually start warming coconut oil in the egg pan while getting the tortillas & ‘cado ready. And letting the avocado sit while the eggs cook makes it softer & more amenable to taco’ing & just makes it tastier… I dunno! It just works!

Easiest and tastiest breakfast tacos ever.
