The days that I teach are really tough because driving to campus is like a fast food gauntlet! Taquitos here. Breakfast sandwiches there. Eggs on English muffins everywhere!
But I was good!
I have to give credit to my #1 gal Jelaine, though. On Monday (her day off, no less), age set us up with lunches and snacks for the week. Plastic containers full of “adult Lunchables” (lunch meat with cheese and spinach that we roll up), salads with baked chicken breasts, and chicken and broccoli fill our fridge, and leave no excuse for having something unhealthy to eat. She’s so good, and I really associate her effort in keeping is on track for a healthier life. It makes a huge difference to have a teammate in this.
